Need to prepare my Fast Pass selections

Sept. 7th I'll be eligible to book my Fast Pass+ selections.
I never did it before.
I have already seen on "My Disney Experience" where I will do that.
Since my OP here is Aug. 21st there is naturally a padlock symbol locking me out of Fast Pass + until Sept. 7th.
(I wish I could practice so I would feel more confident that morning at 6am)

Anyway, I will tell you about my family so that any of you nice people might tailor your suggestions specifically to us.
Steve(me): I like rides that are like the Haunted House, Pirates of the Caribbean, Soarin'....anything that is not a roller coaster or stomach turning
(So for me, no Space Mountain or Tea Cups ;))

Mrs. Steve: She likes everything. She's really flexible

Teen Daughter: She is similar to my wife but like me she wouldn't want Space Mountain. Yet she's done Runaway Mine Train. Not her 1st choice though. Ya know?

We will be in Magic Kingdom on Wed. 11/7
We will be in Animal Kingdom on Thurs. 11/8
We will be in Epcot on Friday 11/9
On check out day we'll go to Disney Springs for shopping and lunch at "Chef Art's Homecomin" (12 noon)

NOT doing HS.....not interested in Park Hopping

Big Thunder, Peter Pan's Flight, Splash Mountain (with just one day at MK, skip Seven Dwarfs Mine Train)

Flight of Passage, Kilimanjaro Safaris, Rivers of Light (assumes you're skipping Expedition: Everest)

Soarin', Spaceship Earth, Seas with Nemo and Friends
