Our last day in the world is Scheduled for MK. I havent made any dining reservations yet cause i just cant seem to get excited about anything in MK for dinner. I could really use all your collective wisdom, experience, and playfulness in coming up for a surprise last trip dinner for the wife.

All input is greatly appreciated and may be stolen as an original idea when i tell the wife where "I came up with" the idea. :)

Yeah- the best plan IMO is to leave the Magic Kingdom if you want to get excited about dinner. You have the 3 monorail resorts + everything at WL and Ft. Wilderness to consider if you want to dine in that area. You could even skip ADRs and dine/drink at the various lounges if you want to take a more unconventional approach. In fact, many of the restaurant lounges offer their full menus at the bar.

I agree with all of the above. Between the 4 resorts right in that area, there are so many different restaurants to pick from. There are the signature restaurants, which are wonderful, but there are also some good options that aren't quite so pricey (still not necessarily cheap, but not as pricey). Any of the resort options will most likely offer you a better dinner experience than what you will find inside MK.

If you're worried about leaving the park and missing out on time there, the transportation to and from those resorts really makes it easy, and you could always go back into the park again after dinner.

And if you haven't toured the other resorts yet, those in particular are really interesting to see!

California Grill.

It's close, it provides a nice atmosphere coupled with decent food. The view in all directions is pleasant, and, if timed properly the fireworks show at the Magic Kingdom seems more unique from the terrace.

Besides Liberty Tree Tavern I personally am not a big fan of the TS options inside MK!
As others have mentioned I suggest you consider looking at any of the surrounding resorts for your dining inspiration.

CR - California Grill, Wave (personal favorite)

FW - Trail's End, or even Trails To Go where you could have a Fried Chicken dinner w/sides (Sun - Thurs)

GFR - Grand Floridian Café, Narcoossee's

WL - Artist Point or better yet dine in Territory Lounge and you wont have to make reservations (yes you can order off Artist Points menu)

Wise choice. If you're celebrating anything be sure to tell them in advance. Last time my DH and I ate there they had literally a confetti girl going around to tables and sprinkling them with "pixie dust" before their parties sat down. Maybe they do this at other restaurants but I've only seen it done here.
