MUST you be bilingual?

Looking at the different jobs, it says you must speak Spanish. How does that work for college students and possible employees who don't speak Spanish.

If it says "must speak Spanish" under the Basic Requirements section, that is just what they mean. Perhaps it was a listing for a language specific role, like to answer the reservation line where a caller pressed 2 for Spanish. Most front line jobs list bilingual as a desired, but not required qualification. Guests speak any number of languages and it is helpful to have people nearby who can translate, but they hire people every day who do not speak a second language.
