Order a nice cake fron Disney catering and have it on a fireworks cruise.

Would she like to ride a segway? They have a fun segway tour in Fort Wilderness. I'm not sure if they still have the one in Epcot.

depends how much money you are willing to spend

Victoria and Albert's would be one of the most memorable meals of her life, but it ain't cheap!
my parents preferred to go to Hoop de Doo revue for their special night. everyone is different.

a lovely meal at California Grill watching Wishes fireworks from the rooftop is also a very special event

can't agree enough with one of the fireworks cruises, we prefer the one to Illuminations because you are so close to the action, really immersed in it all.

cheaper but still special would be a horse and carriage ride around either fort wilderness or Port Orleans

one of our favorite special activities is the sunrise safari from Animal Kingdom lodge if perhaps you are staying there. the requirements for who can and can't go on it seem to keep changing, you would need to investigate

You could also take her to Castle Couture to get sprinkled with pixie dust ... Never too old for some pixie dust!

What we did for my grandmother when we took her for her birthday.

Cinderella's Royal Table for lunch.
Hoop Dee Doo Musical Revue for dinner. (Make an ADR early in order to get a good table).

Things I would recommend:
Wishes Fireworks Cruise
Fantasmic! Dinner Package
Illuminations Dessert Party

where and how are u able to do that thanks!!

Castle Couture is a shop in Magic Kingdom directly behind Cinderella's Castle. You will see a CM or two walking around with a wand in the shop and just ask them! They will sprinkle you with pixie dust and it is free.
