We are staying off site and our 30 day window opened at midnight for our first day for the first members of our party (8/21). I was able to make FP reservations for 8/21, but I am unable to make any reservations for the following days of our trip. I am unable to select 8/22 or later for any member of our party.

My understanding was that at 30 days, once we were able to make the reservation for the first day, we would be able to make reservations for the entire length of the tickets in the party. (As for tickets, I have an AP voucher and I manage the account for everyone else. The rest of the party has either 7 or 8 day park hoppers.) Is my AP interfering with my ability to make the FPs? I really don't want to make a set of reservations each night for the next 7 days!

If you do not have a room reservation at a Disney resort, you cannot reserve FP+ more than 30 calendar days in advance. The length of stay concept you're describing is only for folks booked in a Disney resort, not if you are staying off site. Those same on site resort guests can also book their FP's 60 days in advance.

In the scenario you describe, if you wanted to start booking your FP's 30 days before your first day, you would indeed need to go back in every day when a new day opens up and book for that day. Also, if you are not staying in a Disney resort you can only have FP+ reservations for a maximum of 7 days no matter whether you have an AP or any other type of admission media.
