Splash wins for me as it's my favorite ride and I just love water rides in general.

Matterhorn I really liked prior to the 2016 renovations, I miss the crystal scene and music and they made the monster way too loud.

I happen to like the loudness of the roars. It definitely gets my attention in a spine tingly way.

Now that... That is the spicy take. Bold move.
Everest is okay, but too start and stop for me. The ground coaster portion at the start is bland. Then we go up the lift hill and into the broken track. Then we pause. Wait. Go backwards for brief stint. Pause. Watch a animation, Go into the the big drop and a few turns then re-enter the mountain to barely get a look at the Yeti. The Yeti also seems so low to the ground as we just came in from outside near the ground rather than hidden up inside the icy slopes.

Matterhorn is a rougher coaster and not as thrilling, but its non-stop. From the moment our bobsled releases into the lift cave, we are moving along and experiencing excitement. Plus, not only does the Yeti (Snowman) in the Matterhorn work, we get a much better view and see him appear twice per ride. As a theme park attraction, I go with Matterhorn over Everest any day.

Splash Mountain.

Neither is a top 10 for me, but Splash Mountain is undoubtedly the better show and the better ride. And that's even admitting that Disneyland's Splash Mountain is the distant third compared to the other two versions in Tokyo and Orlando.

Matterhorn is an icon. It should always be there. But I don't want to have to ride it again. It hurts and it's kind of hokey, even with the latest updates. They should get Doan's backache pills to be the sponsor of the Matterhorn.

The Matterhorn for sure. I could spend an entire day in Disneyland with a frozen apple juice and just sitting near the Matterhorn looking at all the foliage and listening to the alpine music.

As has been said many times before, Matterhorn is just too painful with all the shaking on the tracks, especially the left side (when looking at it.) Splash Mountian has a LOT more to look at, good, catchy music, lots of animatronics. However, I'm not crazy about getting too wet, so I'm selective of when I go on it. Usually only when I'm with people who want to ride it. For that matter, I probably ride Matterhorn even less, because of the back pain that goes with it. Both are good, but I really prefer Haunted Mansion and Pirates of the Caribbean. ;)
