What are the crowds like from December 26 (after Christmas) to December 30 (before New Year's Eve/New Year's) and then January 2 to January 5 (after NY)? Thanks!
The week after Christmas is THE busiest of the year. Kids are out of school, lots of people are off work, and people in cold places want a little sunshine.
My rule of thumb is to check the resort prices. The higher the prices, the busier they are.
Not only are holiday rates nearly 50% more than value season*, there are upcharges in many table service restaurants.
Not only will you pay a LOT more for everything, but there will be LONG lines for rides, popcorn carts, transportation, counter service, and, yes, the restrooms.

We visted from Jan 1-7 this year (2007) and it was PACKED. More crowds than I have ever seen during the summer. We thought it was supposed to die down after NY, but it seemed to stay pretty busy. I'm talking 3 hour waits for SM and 60 min waits for rides like stitch.
I've been twice during the last week of January... once for a single day in 2008 visit and one trip (2007) was a 3 day weekend. We had about 20-30 minute wait times on bigger rides compared to 60-120 over july 4th week. The weather can be bad (by florida winter standards i.e., at times warm then suddenly cold and rainy). The parks close earlier. It's much less expensive to stay at resorts so its a nice time to splurge a little more on room type.
