Has anyone been to ICE at Gaylord Palms over the Christmas period, just seen something about it and wondered if it was worth doing?

Definitely. The huge ice sculptures are amazing. A lot of fun to be genuinely cold in Florida, as well.

I have been to it a couple of times and it is worth it especially if you like the theme they are doing. The Year they did Dr. Seuss was insane. Madagascar was cute and I enjoyed it, but it was a little underwhelming.
