When we dined there in June there was no seafood on the menu.

They rotate things out occasionally. Last time we were there they had mahi mahi on the platter.

I'd suggest you a) note the allergy on your reservation, and b) confirm with the host and server. They'll have a chef come to the table to discuss your allergy and will take the appropriate steps in serving the meal.

Disney is great about handling allergies. Had a few meals where my friend's mom joined us. She's allergic to wheat (not just needing gluten-free, she's outright allergic) and all of the restaurants were great working with her on what she could and could not have, plating things separately for her when needed (like the bread service at Sanaa).

It's served family style. Sometimes there is fish on the meat platter. Just note it on your reservation that there is a seafood allergy. Also at check in you can ask if they are serving fish then let your waiter know if accommodations need to be made.

I have a fish allergy and when I just mention it to the server and they have asked if we would like more beef or whatever other meats they are currently serving
But as said previously they are alway happy to help

We were there a few days ago and there wasn't seafood at all. I believe they replaced it with a sausage. I would have preferred the seafood!

I am suprised there was no seafood. I usually see beef, sausage, and some kind of fish (more often than not, catfish). Out of close to a dozen dinners there, I have always had a fish dish served. Either way, as others have said, they can (and will) put any seafood that is being served on a seperate platter (or not bring it at all if you so wish)
