Has anyone done this before?
Flying in to MCO and using magical express Staying at disney for three night
Using uber to get from disney hotel to port canaveral for royal caribbean cruise
Then using uber to go to the airport
Any ideas?

Well.....it'd be expensive. A fare estimate on the Uber website gives $56-$74 one-way for UberX.
The other issue is that Port Canaveral is outside of the Uber service area, so you most likely wouldn't be able to get a pickup there.

You might want to look into other shared-van options.
