I've always thought it might be nice to upgrade what you normally do at WDW. (AKA what I'd like to do for MY honeymoon

) If you stay at a value resort, try a moderate or deluxe. If you can't afford a deluxe, do half your time at a value, half at a deluxe.
Try ordering breakfast in bed one morning. Take a romantic Fireworks Cruise for Wishes. Try to be seated outside on the Rose and Crown Pub deck at Epcot during Illuminations. If you're staying at a resort with a beach, have a romantic picnic. If you visit any of the three monorail resorts, sit on the beach at night and watch the Electric Water Pageant.
Sit down in France on one of the little tables and drink wine and have a pastry from the pastry shop. Do cheap breakfasts and lunches, then have a romantic dinner. Buy some of the silly wedding souviners that you really don't need but want to buy anyway.
Take a tour if you can afford it - there are tons of them and they sound so fun!
Take days off and don't go to the parks. Shop at Downtown Disney. Go see a show - I hear La Nouba is supposed to be amazing.
I think all of those little things combined can make the trip really special without being surrounded by people 100% of the time. I bet you'll have a blast!
