After reading about the chocolate covered potato chips, I thought it might be fun to start a thread about quick and easy holiday treats. So post your favorite recipes or whatever. I'll start with Spiced pecans - easy to make, and really yummy!

Spiced Pecans

INGREDIENTS:


* 1 egg white, lightly beaten

* 1 tablespoon water

* 3 cups pecan halves

* 1/2 cup white sugar

* 1/2 teaspoon salt

* 1 teaspoon ground cinnamon

* 1/2 teaspoon ground cloves

* 1/2 teaspoon ground nutmeg


Note : I actually substitute 2 tsp Pumpkin Pie Spice for the last 3 ingredients.



DIRECTIONS:


1. Preheat oven to 300 degrees F. Line a baking sheet with aluminum foil.



2. In a medium bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.



3. In a small bowl, mix together sugar, salt, cinnamon, cloves and nutmeg. Sprinkle over the moistened nuts. Stir well. Spread nuts on prepared pan.



4. Bake in preheated oven for 30 minutes, stirring once or twice. Be careful not to overcook - they burn easily.

Those sound delicious! I actually saw a chef on TV yesterday (Alex Guarneschelli - in case anyone is wondering) do something similar with pecans but put them into halved sweet potatoes and bake. Looked really yummy.

My go-to treat is super simple. They don't have a name:

Ingredients:
Square waffle pretzels
Hershey's kisses (unwrapped)
Reeses pieces

Line up the pretzels on a cookie sheet and put a kiss on top of each. Place in a 200 degree oven for 5 minutes. The Hershey kiss will soften but not lose its shape. Smush 2 Reeses pieces into each Hershey kiss. Cool in the fridge or freezer. YUM.

sounds delicious ... chocolate + pretzels = superyummy!

This is my favorite holiday goodie:

Ingredients:
Peppermints
Chocolate
Rhubarb

Directions:

1. Chop your rhubarb into chunks about 1-1.5 inches long.
2. Crush your peppermints into tiny chunks.
3. Melt your chocolate in a saucepan at 300 degrees. When melted, stir.
4. Dip your rhubarb into the chocolate so that it is fully submerged. Then take out.
5. Roll the rhubarb around in the crush peppermints until there is an even coat of peppermints covering the rhubarb.
6. Enjoy this festive goodie.

Savannah Cheesecake Cookies
Makes 36 servings
Crust:
1
cup all purpose flour
1/4 cup light brown sugar, packed
1 cup pecans, chopped
1 stick butter, melted

Filling:
16
oz. cream cheese, softened
1 cup granulated sugar
3 eggs
1 teaspoon vanilla or almond extract
Directions
  1. Pre-heat oven to 350 degrees
  2. For crust:
  3. Combine flour, brown sugar, pecans and butter in mixing bowl
  4. Press dough into 9 x 13 x2 pan
  5. Bake 12 to 15 minutes till lightly browned
  6. Let cool
  7. For filling:
  8. Beat cream cheese and granulated sugar in bowl till smooth with hand mixer
  9. Add eggs and vanilla
  10. Beat well
  11. Pour filling over cooled crust
  12. Bake for 20 minutes
  13. Cool completely
  14. Cut into squares
  15. Decorate with fresh raspberries or Maraschino cherries
only 131 Calories
