Holiday Season in Orlando

We will be going to WDW for 10 days in December and while we'll be on Disney property for half of our trip, we'll be spending the other half at my parent's timeshare. Is there anything in Orlando that you would consider a "can't miss" in December?
We're already planning all of the Disney things: MVMCP, Jollywood Nights, visiting Disney Springs for the Christmas Tree Stroll.
We're also planning at LEAST one day at Universal and have plans to see the Grinch.

I'm open to any and all other options and opportunities.

It'll be myself, my boyfriend, and our two kids - 12 year old daughter & 6 year old son.

We experienced ICE! at Gaylord Palms a few years ago. We liked it a lot, it was lots of fun. This year's theme is "A Charlie Brown Christmas".
