Wow that was a confusing E-mail? I think I know why you didn't get any responses. I think you should stick to Magic Kingdom and Epcot on the days you are there for your ADR's and leave Wed to something else since you don't have to be in a park for that day.

Very confusing though

Ok, if I am understanding correctly (and I'm honestly not sure I do) there are just some things that you'll need to decide for yourself, ie: family related issues.

Now, to the stuff that we can help you with, I'll cover 2 of those.
Please don't keep both ADRs at Crystal Palace. Stick with one. You won't wanna go there twice and if you keep both but only use one, you're being sort of selfish. You said yourself it was tough to get an ADR, so take a little pity on the families trying to get ADRs also. Choosing one will also help to firm up your schedule and stick to it a bit.

Park hopping is easy. I don't know why it looked complex to you, maybe their map was confusing. Hop on the monorail at MK, take it to TTC, get on the monorail to Epcot. Not difficult. In fact, I think it's fun because we don't stay at a monorail resort but I love to ride the monorail as much as possible. Good luck with your planning.
