It’s a very open-ended question!

Location won’t matter so much if you are trying to limit walking. Once you arrive at a park, everyone walks the same. Some resorts are closer to some theme parks, but that doesn’t really decrease your walking.

You may want to consider renting a scooter.

I would advise not to over plan or try too hard, you’ll all have an amazing time.

Dining plans tend to be more for convenience than for saving much money, in my opinion; others may say differently. To some degree it depends on your usual eating habits.

Enjoy some research, pick your “must do” things and try to reserve those in advance.

Have fun without making it a chore!

Like @Tony the Tigger said, hotel location shouldn't be of any major concern as all Disney resorts have an ADA accessible transportation option, whether that be a bus, monorail, or boat, to each park and Disney Springs. Some outside (non-Disney) hotels even have accessible shuttles to the parks.

Once at the parks, I would suggest renting a scooter, either from the park or another company. If you rent at the park, you must return the scooter prior to exiting the park, if using another company you may be able to keep the scooter the entire trip, some companies even offer hotel delivery and pick-up.

Keep your itinerary light and not over filled, there are many things to do and you may not be able to do them all, however anything you do will make it a great trip. For the things you may not get to do, be sure to come back again to experience it all.

If staying at a Disney resort or Good Neighbor Hotel, you will be able to create your Fastpasses well in advance via the My Disney Experience app or the website (MyDisneyExperience.com).

Do some research and figure out your "must do's," if you have any questions the users of this forum are full of information, as well as Disney's Guest Relations, they love getting phone calls and helping you make your stay more magical.

Unfortunately, I have no experience with dining plans and I don't wish to give misinformation.

Hopefully this helps, and you're stay is most magical!
