When I think of a picnic I think of sandwiches, a variety of salads, veggies, dip, and fresh fruit pies!
So for my menu I want:

Eggrolls (Adventureland/Safari eggrolls)
Fruit tarts (Boulangerie Patisserie)
Grilled veggie sandwich (Sunshine Seasons)
Lentil salad and mixed veggie salad (Tangierine Cafe)
Pita Chips w/trio dip (Victoria Falls)
Tabouli (Sunshine Season's)
And either some Beer, Champagne, or wine!!!

Ah really, I wish I'd read this earlier! I almost went on a picnic today, but ended up eating lunch before I went to the park. (Not a Disney park, just my local park) ;)

I would bring the Caprese sandwich from Earl of Sandwich, along with some of their tomato soup and a bag of chips. Yum!

One stop shopping at Chefs de France

Assiette campagnarde and Assiette de fromages de France and a bottle of whatever Margaux they happen to have (and maybe some glasses to drink it from).

For the uninitiated, thats a charcuteri plate (Sausages, pates, rilettes, etc), a cheese plate, and a bottle of red Bordeaux.

A cheeseburger from Pecos Bill or I want to try a hot dog from Caseys! Corn on the cobb is necessary but I can't remember ever eating it on property.

You can get Corn on the Cob at Liberty Square Market! I'm surprised this is the only spot considering its an American classic so you would think you could find it at the American Adventure in Epcot or at Rosie's All American in DHS!?!
