Does bleu cheese and balsamic even go together? Because I bet myself that before I read the article I could have sworn the reviewers might bring this up, and sure enough...

Bleu wouldn't be my first choice for pairing with balsamic, but I think it would work with a reduction because they're usually pretty mild and sweet.

I was thinking this too. I've made a goat cheese and balsamic flat bread before but the blue cheese pairing sounds...different.

I am not a fan of bleu cheese anyway, but the pictures looked truly disgusting. I would, however, try the bacon cheeseburger one.

I love bleu cheese! However, I am a purist when it comes to Mac 'n' Cheese. But I would try this because I do like the combination of bleu cheese and a balsamic reduction. I actually make mashed potatoes mixed in with onions caramelized in balsamic vinegar and a touch of brown sugar. I also mix in Stilton. Sooo moreish. :hungry:
