I just made a FP for BOG for December 14th. The only available time was 1:25. Could this possibly be a glitch? I don't know how that could be the only remaining time. I've tried refreshing and no other times come up.

A glitch is possible, but considering that it is the most popular restaurant in all of WDW, my money is on that being the only time open.

Based on the huge demand for this place, I'd just be satisfied that you've got a reservation and work your plans for the day around it

I agree with Yoda! When I made FP+ for mine the three or four times I have eaten there it was after 1pm and my most recent was 1:35-1:55pm slot.
Oh also a tidbit order ahead of time what you want to eat (YOU CAN CHANGE WHEN YOU GET UP FRONT THEY WILL ASK YOU). I advise this because you bypass the larger line inside where FP+ that have not ordered ahead of time have to go and you can go straight to your table you pick. We always order ahead and change once we get there if needed to avoid the line inside that you go to the cashiers etc. And it was long this last time we went for the ones without pre orders! Lol.
