first time 2 days solo looking for park hopper advice

Hiya, after 2 cancelled WDW family trips last year I will have the opportunity to go solo to WDW for 2 days after a work conference in late September. My plan at this point is to arrive to Pop Century on Saturday late afternoon after the conference. I have dinner reservations with some work friends for Raglan Road and will explore Disney springs Saturday night, the rest of the trip is just me ( I have travelled a bit solo before and am totally comfortable on my own) I have 2 day park hopper tickets for Sunday and Monday. My initial thought was to rope drop Animal kingdom and switch to magic kingdom Sunday then rope drop HS and switch to Epcot Monday. I'm worried I'm packing too much into the 2 days and I'm thinking to drop Epcot and park hop to magic kingdom both Sunday and Monday. The 2 rides that I was interested in at Epcot were Soaring (I've been to the California adventure version) and Frozen. The other draw was snaking and drinking around the world but since I am solo and have not been to WDW I am thinking that there are plenty of wonderful treats at Magic kingdom to experience. Also this may put less pressure on me seeing all of HS so quickly ( I am really hoping for a boarding group like everyone else) The only thing that might sway me back to Epcot are Fantasmic or the nighttime fireworks show at but I'm thinking that they won't have these in September? What do y'all think? Also, thanks for your time :)

Fantasmic is at DHS and we don’t know if that will be back in September. But Epcot Forever will be on every night until Sept 30th.

Awesome, that seals it for me then. I'll head to Epcot, plus I just looked at the menu for food and wine and yum! Thanks for the reply!

Honestly your initial plan would have been my recommendation.
AK and hop to MK
HS and hop to EPCOT.
MK and EPCOT currently have fireworks.
HS is where Fantasmic is and it has not restarted yet.
No reason to think that there won't be fireworks at MK and EPCOT in September.

Being your first time to WDW then PHing would give you a bit of all the parks but not a lot of time to experience each. Youll be missing out on a lot by doing partial days at each. Going solo you can get more done by moving at your pace and your plans and not be hindered by the others. The F&W at EP is a great time with lots of flavored items. Check out the menus and reviews when they get posted and figure out what likely to be your picks. The plates vary in amounts given and getting a lot of different foods can get expensive and filling. Both Frozen and Soarin are extremely popular and the lines build fast at park opening. Try to get to them as early as you can to avoid long wait times if you can.
If you are counting on a boarding group for RoTR then look up the posts giving advice on getting them. You must be in and hitting join at exactly 7am and just seconds after will make you lose out.
