I went early Feb in 2006. It was cold, very cold. All the standing water, fountains, drinking fountains etc were frozen solid. It looked very nice though. The rainforst cafe had a certain ironic beauty with frozen waterfalls.
We had no rain (lucky) so all we did was wrap up warm and spend all day round the parks, back to the room at closing time for a quick warm-up shower and then out for food. A quick tip for you - if your cold then go on Pirates, As soon as you enter the queue you get a blast of heat that feels wonderful and continues right until you have to bring yourself to go back into the cold at the end of the ride.
Queues were almost non existant. I think I had to queue for about 15mins once for BTMRR but everything else was simply walk-on.
Getting food at the restaurants was a little tricky. I was less educated in the ways of Disney back then so we made no reservations and didn't really think about eating in any of the in-park restaurants. We simply went to Disney Village, found something we liked the look of and waited 10mins till a table became free. The food is a little expensive but I'm sure you expected that!
A quick word of warning - there were no fireworks!
