I'll be staying offsite during the last week of April into May and i'm worried about not having access to fast pass plus in advance. Does any have a sense how fast the fast passes are going for the major attractions like space mt, enchanted tales and big thunder mt?

Fastpass plus at magic kingdom

I honestly think it's all about timing in terms of getting FP and how long certain rides have FP available.
If you go on a weekend or during a busier time in the month/year, then the FPs for the more popular rides are going to be gone very early. On slower days you might have a better chance, but some of the most popular (like Peter Pan), still seem to go relatively quickly.
Crowd calendars I've seen show the last week of April to not be too bad for overall crowds, so you might have a better chance, but I still think FPs for certain rides are going to go quickly no matter what.
I know on slower weekdays we've arrived between 11am and noon and many FPs were still available (with even decent times), but Peter Pan and a couple of others were already gone.
You should be OK if you get there early enough or as close to rope drop as possible. Most will advise to do a combination of going early and doing a couple of the most popular rides and then getting FPs for others for later on when the park is busy.
