FastPass+...I need tickets and hotel ressie and other questions?

I am a little in a tizzy as I have always planned our trips at least a few months in advance. Well we decided what they heck and booked 5 days the week before Thanksgiving. So I have the hotel reservation but did not buy the tickets yet. It's my understanding that to use fastpass+ I have to buy the tickets and link them to the hotel reservation? Does this guarantee I will have fastpass+ or is not even rolled out everywhere? Also once I link the tickets to the hotel reservation is it now a package or can I still cancel the hotel ressie without penalty(a week before arrival). Finally if I can make advance fastpass ressies does this mean my ticket is locked in for the park I chose for the ressie that day, meaning I have to use it there that day and can't change my mind?
Sorry for all the questions but I am having trouble collecting the answers, if all this is somewhere please let me know!

You need to have valid tickets associated with a MDE account to book FP+. And you can only book as many days worth as you have park entries. You don't need to buy them through WDW, you can get them from 3rd parties like Undercover Tourist. If you buy them from WDW, then yes, it becomes a package.
When you book FP+ reservations, you don't need to use the ticket at that park, or even that day. But as long as you hold those FP+ reservations, you can't make others.
As of now, all WDW O/O resorts are participating in the MB/FP+ "test". So you should indeed have FP+. They could cancel that at any time, but since they seem to be stopping issuing KTTW, I don't see them going backwards now.

Thanks dreamfinder for the heads up about the package. Do you know how I would link the undercover tourist tickets ahead of time. I do indeed get the fastpass+ as I got the invite but I would still rather not book as a package as I am going to wait a few weeks more to decide which hotel we want to go with(budget wise)...we have ressies at two.

Once you buy the tickets, you just go onto the MDE page and choose the "Link Existing Reservations & Tickets" option. Then it'll ask you to enter a number off the back of the ticket, which person to assign the ticket to, and voila, you're done. Some people have found that the phone app is faster to do this step.

Just make sure you've set up profiles (or linked to your friend's profiles if they've made their own) before getting to that step.
