We recently went to El Patron which is fairly close to the Disney Springs area off property and near the Olive Garden and WaWa gas station. They have excellent Mexican food (some of the best fajitas I have had), good service and a very extensive margirita menu. Just wanted to suggest this place. Also, if you go for the lunch buffet, it is a really good value and all you can eat for under $15 a person.
