Driving down I-10 with kids

My husband won't fly, and we live in Houston. Over the past 5 years we've driven 10 times from Houston to DW. I have a folder full of places we've eaten, slept and more importantly played, but I'm always looking for something new.

We've done everything from stop for dinner in Baton Rouge at the mall to ride the carousel to spending the morning in Destin.

Are there any locals or frequent travelers with suggestions?
