they're 11x17 usually cost about $30-$40. They're also being sold by someone (I think it was the same guy) on the messageboards at doombuggies.com. Oddly enough it looks like someone else on ebay has taken the same drawings on 24x36 and is selling them for $15 a sheet

Pirates of the Caribbean at WDW
blueprintplace also sells POTC plans but theyre not as good as the castle prints (has the canal layout and some of the sets but not a lot of detail) If you want to do POTC you would probably want to combne the info from that sheet with info from the plans for the DL version (same scenes, same scale and there's a lot more info on the DL version) The WDW POTC plans also don't have most of the line area.
Personally I would prefer to have a model of the castle in my back yard. If it was big enough it could be a gazebo. Of course if my yard was big enough I would build the entire park, but it's not
Let me know what you decide, and if you need any more info on your project I'm just a font of odd information on the buildings (as you can tell from my babbeling on)
