With the Disney Magical Express service, we check out in the morning but obviously want to spend more time at the park before our flight leaves at 5.00 in the afternoon. 2 questions: I assume they will hold our bags at the Resort until we are ready to board the bus? and how often do the buses go - if we want to be at the airport an hour before, what time would we need to leave the Resort?

Yes, you can have them hold your bags at the resort, or you can actually check them through so you don't have to bother with them.
The day before your departure ou will get information at your door aboutbe your scheduled departure time for your bus. It will be approximately 3 hours before your plane's departure time and they will ask you to report to the bus stop 10 - 15 minutes before the bus arrives. So you can spend the morning at the park, but plan to be back to your resort by 1:45.

You can do what we do and check your bags in at the resort check-in and have the resort hold on to your carry ons until it's time for the pickup.

Resort Airline Check-in isn't available to everyone, you have to be flying one of the "participating" airlines.
Bell Services can hold your carry-ons for you (and your regular luggage if you're not eligible to use RAC). But as noted above, you can't choose what time you will return to the airport, Disney will assign you an exact bus time for the return.

And you have to leave from the resort you stayed at.
I asked once if we could have DME pick us up at the Contemporary Resort because we were spending our last day at the MK, but we were staying at ASM. We could do resort check-in at ASM in the morning before we left for the park and just put our carry-ons in a locker.
Unfortunately it was a NO go.
