I was thinking of buying Disney gifts card from Sams Club and using them for dining in the parks instead of DDP.. Has anyone done this before?

I've used the gift cards in the past to pay for our trip buy never actually tried using them while at the park. I've been told that they can't be used everywhere, specifically at some areas of EPCOT in the World Showcase. I don't know where you plan on eating but I know for us we eat a lot in the different countries. I would make sure you can use them there if you plan on eating at any of these restaurants.

If you're staying at a Disney hotel, you can open a room charge account with a regular credit card and then use the gift cards to pay off the balance before you check out. While gift cards are pretty widely accepted in most places around WDW, I believe room charges are accepted at some places that don't do Disney gift cards.

Though at the Swan & Dolphin I don't believe they accept either gift cards or room charges.

You will be able to use Disney gift cards at nearly every dining location in Disney (there may be some of the third party vendors that don't take them, but I am yet to find one). So if you were planning to use the cards to pay off your meals, then I don't think you will have any problems.
