Dining Question

I am sorry to put this question out there, I have been looking for hours and cannot find the info. I have a trip planned for October and just did all my dining reservations, if I cancel my Hotel /package reservation, I believe I will keep all ADR's for food and will have to cancel those individually, is that correct?

Correct, dining reservations are independent from a room reservation/vacation package, so they would not be affected if you were to alter/cancel those plans.
