The size/selection. Most of the DVC/Deluxe resorts really only a single station offering 8-10 entrees at any given meal. The moderates and values both have 3-4 stations, each of which tends to focus on a type of food and offer 4-6 entrees each. So deluxe may offer a single flatbread pizza, while mod/value will have a pizza window with multiple toppings you can customize from. I may be over simplifying a bit, but look at the menus in the dining section here and compare.
