I know stores offer a 10% discount on purchases over $50 (well, some stores) with a Disney Visa card. My question is, do I have to use my Disney Visa card to get the discount or can I show my card and use a gift card to pay?

If you pay the card in full the interest rate is inconsequential.

Technically, yes. The fine print specifies
Some people do have luck with getting the CMs to let them use other forms of payment, but they should be requiring you to use your Disney Visa or rewards card.

Some people want to pay with their magic band and not carry a credit card in the parks.
I was asking about paying with gift cards, not another card.

I would suggest using the gift cards to pay towards the room costs, or perhaps dining costs.
