We will be at WDW in two weeks for 11 days and we have always been pretty adventurous. What's the one off the beat thing that you do that you don't think the regular visitor to even know to do?

Lets see... since you are adventurous, there's a variety of water sports at the Contemporary/Baylake Tower Marina.
Animal Kingdom also has a few tours that get you closer to the animals.

One of my favourite things to do for a break from the parks is to hire a boat and float around Seven Seas lagoon for an hour or two. So relaxing!

Go watch the water show from the Grand Floridian dock or the Poly beach areas.
The water show has been going on for decades and is fun to watch IMHO.
