My experience with Citricos and other similar restaurants at WDW (California Grill, Flying Fish Cafe, Jiko, etc.) is that they don't change their menus that drastically with the change of seasons. They tend to keep them 90-95% intact throughout the year and possibly rotate in a few new items here and there. It's certainly not like gourmet restaurants in New England and other parts of the country/world that experience a number of seasons and reflect the new ingredients with them in their menu planning. Nevertheless, Citricos and the other restaurants I listed are all fantastic restaurants. I would even say extraordinary restaurants at times.
