Trying to pull off a surprise Disney dinner at home over the next month or so. Does anyone have the recipe for the Arancini from Citricos? It's my wife and son's favorite appetizer on the property! Thought I would ask.
This is a recipe below. not sure if it matches Citrico's exactly. I know here is Boston some of the Italian markets have them ready made, you might want to check around in your area. I hope this helps.
Pour enough oil in a heavy large saucepan to reach the depth of 3 inches. Heat the oil over medium heat to 350 degrees F.
Stir the eggs, risotto, Parmesan, and 1/2 cup of the bread crumbs in a large bowl to combine. Place the remaining breadcrumbs in a medium bowl. Using about 2 tablespoons of the risotto mixture for each, form the risotto mixture into 1 3/4-inch-diameter balls. Insert 1 cube of mozzarella into the center of each ball. Roll the balls in the bread crumbs to coat.
Working in batches, add the rice balls to the hot ail and cook until brown and heated through, turning them as necessary, about 4 minutes. Using a slotted spoon, transfer the rice balls to paper towels to drain. Season with salt. Let rest 2 minutes. Serve hot.
As Zurg said, it is really just old risotto with some additional bread crumb and cheese to bind it. Mold it into balls with a cube of cheese in the middle, bread and fry.
I can buy them at a number of Italian deli's around here too. And at under $1 each, they are well worth the cost as compared to the hassle of making them myself (just put them in the oven to reheat)
