I fully admit that I hate to cook, but I love to bake all kinds of Christmas goodies. So I thought it might be fun for us to share some of our favorite recipes for treats this time of year. I'll start with my Spiced Pecan recipe. Not only are these simple to make and delicious, but your house will smell heavenly for hours.

Spiced Pecans


INGREDIENTS:


* 1 egg white, lightly beaten

* 1 tablespoon water

* 3 cups pecan halves

* 1/2 cup white sugar

* 1/2 teaspoon salt

* 1 teaspoon ground cinnamon

* 1/2 teaspoon ground cloves

* 1/2 teaspoon ground nutmeg



DIRECTIONS:


1. Preheat oven to 300 degrees F. Line a baking sheet with aluminum foil.

2. In a medium bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.

3. In a small bowl, mix together sugar, salt, cinnamon, cloves and nutmeg. Sprinkle over the moistened nuts. Stir well. Spread nuts on prepared pan.

4. Bake in preheated oven for 30 minutes, stirring once or twice. Be careful not to overcook and burn

Jewish Apple Cake

3 cups all-purpose flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
2 cups white sugar
1 cup vegetable oil
4 eggs, beaten
1/4 cup orange juice
2 teaspoons vanilla extract
4 apples - peeled, cored and sliced
2 teaspoons ground cinnamon
5 teaspoons white sugar
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan. Combine the ground cinnamon and 5 teaspoons of the sugar together and set aside.
  2. In a large mixing bowl, combine the flour, salt, baking powder and 2 cups of the sugar. Stir in the vegetable oil, beaten eggs, orange juice and vanilla. Mix well.
  3. Pour 1/2 of the batter into the prepared pan. Top with 1/2 of the sliced apples and sprinkle with 1/2 of the cinnamon sugar mixture. Pour the remaining batter over the top and layer the remaining sliced apples and cinnamon sugar.
  4. Bake at 350 degrees F (175 degrees C) for 70 to 90 minutes.

* A ham product of some type. Big and round, I would imagine.
*Spicy stuff. In powder form, I would imagine.
*Sweet stuff. In liquid form, I would imagine.

Directions:

1. Place all of the above ingredients on the kitchen counter.
2. Send wife into kitchen.
3. Sit comfortably on couch in the family room with a beverage and snack.
4. Turn on TV and watch a holiday show.
5. Remain alert for the scent of a sweet/spicy pork-related product in the air.
6. Wait patiently for wife to call for you with the words "It's ready".
