we are going to both Disneyland and Disney’s California adventure Monday and Tuesday and I am just wondering are there any characters not listed on the app that we may run into or meet and greets that we should know about so that we don’t miss them?

TONS. "Atmosphere" characters are rarely listed on the app. You'll find the most in Fantasyland and Avengers Campus. Others pop up randomly anywhere from Main Street to the Hollywood Backlot (where they've had the sensational six out a lot lately in classic outfits). Also check the meet and greet area next to Zocalo in Frontierland as well as the bridge past Big Thunder heading toward Fantasyland and the area around the Golden Horseshoe.

Have you checked the app recently? Maybe 6 months ago they added most of the stealth characters onto it

Really? Gaston? Evil Queen? Flynn? The princesses outside FanFaire and out front by the floral Mickey and by the wishing well and wandering Fantasyland? Jack Sparrow all the times he's been out lately all over New Orleans Square from the stores to the Harbour Galley? Tiana? Miguel? Ms. Marvel? Gamora when she walks through Campus? I haven't seen atmosphere listed on the app. I also haven't seen Captain America (Steve Rogers) listed on the app in ages - they just list Sam, but Steve is out often, too. There's no specific listings for the Visa meets that I've seen either. And when the regular characters are listed, often they just list the window (i.e. 9am-2pm, 3pm-9pm, etc.). Some are given specific times & locs (i.e. Mad Hatter at Refreshment Corner at 1:30pm, etc.), but not nearly enough.
