I am pretty sure you can, but the problem would be availability. Some of the numbers floating around the net right now have Disney resorts at nearly a constant 90% + occupancy rate. While I am pretty confident Disney would do everything in their power to let you spend more of your money on a nicer resort if you plan on doing it you should do it well ahead of time.
