Can I ask... how much were non Florida resident AP's prior to all this?

I never considered getting one before as I always booked packages that had pretty good discounts included.

I'm not really even aware of the types of AP's that were available.
I'd be interested to know what a non Florida resident AP was going for?

Yeah, I thought $900-$1100+ looked steep for FL Resident APs, I paid much less for mine in 2019. The Gold ($719) was a good happy medium for me but there are lower tiers as well. And also worth noting FL residents can opt in for a monthly payment plan. But obviously all of this is subject to change when the program comes back.

One more quick question...
I booked a package with the 2 extra days free tickets so I bought a 5 day ticket for the price of a 3 day ticket.
If they start selling AP's again could I upgrade from the 5 day ticket to an AP after arriving by paying the difference between a 5 day ticket and an AP or would that be a no because I have a discounted ticket?

I think you’ll be able to upgrade, but if you bought the ticket from Disney they’ll likely use the price you paid as the starting point.
