This trip is just the two of us. Things I haven't done and will do on my next visit:

Walk around the "trails" at AK. I have never taken the time to just walk around the trails near the Tree of Life. Guess we will do that on our next trip.
Explore other resorts and maybe have a sit down meal (any suggestions).

Got any of your own?

Flying Fish is a great restaurant that is within a comfortable walking distance from Epcot's International Gateway. I have had some great dishes at Tiffin's as well, but Flying Fish @ the Boardwalk resort edges it out for me. I have never tried the Boathouse at Disney Springs, but I have heard good things.

We ate at the Boathouse last February, and the food was EXCELLENT! Crowded, but the service was great, so it's well worth the visit. Bucket list item? I'd love to stay at one of the cabins along the lake behind the Wilderness Lodge where we could just take a boat across to MK and/or catch a monorail to Epcot after the crossing.

I've been making a Disney bucket list for a while LOL. My list includes: staying at the Grand Floridian and the Polynesian (ultimate split stay), I would love to win a stay in the Cinderella suite in the castle, Wild Africa Trek, actually swim in a Disney pool (5 trips and never scheduled time to do it!), play a round of miniature golf at Winter Summerland, go to Typhoon Lagoon, and go during Christmas season.

Plus, go to Disneyland in California as well as Paris and Tokyo :)

Victoria and Albert's Chef Table is my #1 bucket list item. A more general bucket list goal for me is to take more time in WDW to just sit and enjoy the moment. I know that sounds kind of "hokey" but I am naturally very competitive, and each time we go to WDW it almost turns into a quest for me to get everything done or do as much as I can as quickly as a can (beat the system ;)). Now that we've gone 10+ times with the kids, I want to try and subdue my inherent desire to get it all done, and remind myself to take time to sit back, relax, and enjoy.

Evening at the Boardwalk and have a walk through Swan/Dolphin & Yacht/beach, nicest place to be on an evening IMO :)

A week-long stay in an over-water bungalow @ the Polynesian, complete with dinning plan and evening happy hours at Trader Sam's.

We're hoping to do the cabins sometime in the next few years. Though no dining plan for us. With a kitchen we wind up having enough meals in the villas to not bother with dining plans. The bungalows are fantastic (did it for an anniversary trip). Darn Disney creating fun accommodations like that ;)

Trying to think of something to do that I haven't done before that I want to do. I do have things I want to do with my offspring that we haven't done yet as a family. Renting boat on 7 seas lagoon, behind the seeds tour, water park visit, a stay in every DVC resort. Some day we'll get them all :)

Many years ago I put a created a list of things I want to do, things I want to eat or places in WDW that I want to see in excel, sorted it by park, shrunk it down so it fits on 1/2 sheet of paper. When my niece first saw the list she thought it was funny but now every trip she says bring out the list and let's see what we can cross off. As Disney opens new things I add them to my list. I figure as long as the list still has items on it I'm not finished visiting, so I have at least one thing on the list that I'll probably never do Mission Space but you never know.

I had to do Mission Space once (crossed off list). That was before they had the two versions. It wasn't near as bad as I thought it would be. I did have a slight headache the rest of the day but did not get sick.

I have a fear of being trapped so I've stayed away from this ride. Did Sum of All Thrills when it was still around in Epcot and I must have had a panic look on my face when the CM strapped me in because he asked if I was going to be OK. After the that I decided to stay away from Mission Space.

I hope they bring back the "Year of a Million Dreams" one day. As a lucky recipient of a night in the Castle Suite I have to say I will never ever forget that incredible day. Best day I ever had in a Disney park.

I want details (and pictures) please, maybe create a post about it?...
