Can anyone tell me how bounce back offers work? So if my trip is in August when would the bounce back offer be for? Thanks!

It depends - either later in the year or the following year, you just must book it before you go home.

Historically bounce back offers in August through October have been for free dining during similar dates for the following year.
With the unprecedented park closures, future offers are anyone's guess.
As @DisneyJoe said, you must be book prior to your departure.

Also note, it there isn't a bounce back offer in your room, we've always been able to call and ask for one, letting them know we were on-site.
