Birthday fun for 8yr old girl?

My daughter will turn 8 the day after we leave WDW in October. We will probably still be traveling home that day so I want to do something special for her birthday while we are in the parks. We are already inside the 180 day window and all of our dining plans have been made. Any suggestions on something (other than the Bibbity Bobbity boutique) we could do for her? We will be there for 7 days with extended family and are staying in BLT. Thanks in advance!

Will she have cousins or siblings there too? What about the Pirates and Pals cruise together with them, whilst the adults have time for a drink somewhere round the monorail loop?

Would she enjoy the Sorcerers of the Magic Kingdom, or the Pirate game?

Kayaking, pony trekking, visiting the ponies at FW. Visiting GF for afternoon tea, she could also request a tune from the pianist in the lobby.

I've also seen the pianist at Casey's play Happy Birthday to guests, just a wee thing you could do to surprise her.

It's not in everyone's budget, but either a Wishes or Illuminations fireworks cruise is great for a birthday. You can order a birthday cake through Disney somehow and have it right on the boat (otherwise it's just chips and pop provided). IIRC, you can fit up to 10 people, so your whole party might fit and it doesn't cost any more for 2 people or 10. I think the Wishes cruise even leaves from the Contemporary dock, so it would be a quick trip back to your hotel room.

Since you guys are staying at BLT, you can probably afford it. ;)
