Our airline tickets were moved to an earlier flight. I think we may be able to have a half day at one of the parks. Which one would be the best to visit on a Saturday?

It all depends on the calendar, what time of year ? My default park for half a day on arrival would be Epcot for the best variety of food and usually lower crowds.

The week after Easter, Passover, and tax filing...good timing as most spring breaks will have concluded and the temperatures average in the comfortable range.
I'd guess it's up to exactly how much you'd be up to experience on a busy travel day. Epcot and the Magic Kingdom would be open the latest those days, with obviously MK having the most rides but also more people.
