Best Gluten free cake

Going the first week in Dec with my daughter, fiancé, and their two kids. She would like to get married while we’re there (very small - just the six of us) so I would like to get a small cake. But she is gluten sensitive so it would need to be gluten free. I know there are several bakeries that would do a small wedding cake, but wondering who would have the best gluten free options?

My wife is gluten sensitive and we all love the gluten free cake at Nothing Bundt Cakes. There is one just north of WDW off I-4. They offer some custom decorations, but maybe not the wedding cake level of decor. You can see the decorations offered online.

There is a gluten free dairy free bakery at Disney Springs called Erin McKenna’s Bakery. I have never been there, but have heard good things.

I can't count how many times we've been there and cleaned out the place
The beignets (both gf and original) at FQ are worth the trip if you have time

The Disney bakeries used to offer gluten free cakes, including custom cakes. I know @coachwnh has had a number of very nice gluten free cakes over the years. I believe he usually worked with the Grand Floridian's bakery. That being said, I know the Disney bakeries have pulled back a lot on allergy friendly cakes in recent years and I've seen some reports of people being turned away. Erin McKenna's is a safe bet, even if they don't have the most ornate designs, but you can also try contacting the various resort bakeries to see if they'll accommodate you.

It is good, but $$ for what you get. I have not tried to order a big cake, but my extended family has gone there for treats.

Second, we have not ordered anything custom from the GF or Contemporary's bakery, but I have seen some of their creations and they can be AMAZING! A few times when staying at CR or dining at Cali Grill we happened to see cakes being delivered. When dining at Cali grill, you are allowed to go out on the balcony, and on the way out you walk past the banquet rooms.

The flowers they can do are also AMAZING. I am sure they are very expensive, but they make some gorgeous displays!

On top of that, WDW chefs are very talented at working in chocolate.

I am not sure where he is currently working, but WDW employs a chef who goes by the nickname "Chef TJ." He has worked in a number of locations over the years. I'm not sure how to say here, but he has long been employed as a 'special needs' chef. If someone with an allergy dines at a TS, and requests to talk to the chef, that is the person who (generally) talks to them. Chef TJ's real talent is vegan cooking, but he also takes care of folks with food allergies. If you happen to find where he is working, he is a super nice chef.

I don't know if OP is still looking, but I recently saw a poster on another forum share...

1. a dairy/nut/egg free cake from the GF that was made spring 2022 along with a side note that they've also had GF cakes. So, this tells me that the GF is still making allergy friendly cakes. They also mentioned the Contemporary doing allergy friendly cakes as well.
2. Same poster shared a cake from Erin McKenna where they frosted it to look like a cartoonish horse head. It's probably the cutest thing I've seen from their bakery. It was cheaper and while totally different designs, it was more attractive than the GF cake.
