8.- would they open the backstage shortcuts for guests? would be like an emergency procedure, no? At least they did that in Epcot, but I´m not sure of how it would work in MK.
I´ve also seen the area all roped off to the monorails as sillyspook mentioned.

7.- I can remember two now... on the left side of the Castle, under the arches behind the fountain. There is another one to an elevator inside the Cristal Palace... does that count?

actually i was in the MK for the new years celebration and they opened up a backstage door i think it was next to the Plaza and we walked behind the buildings on Main Street - it was interesting
