Hi,
we are planning a trip for april 2025. cant change. We did some research, days we have to avoid, i think:

3 - 6 Disney run
13 - 21 easter week
25 - 28 cheerleading

so if we plan the trip between 7 - 12 are we 'safe'? When i look for springbreak dates, the most are in March? We will be traveling with a 2 year old so we can skip the 'scary rides'. Are we crazy if we went 7 - 12?

Its about the best you can hope for. You avoid the busiest days but realize that some families do stretch out their trips to those events by a couple of days before or after. That gives them the event plus some pure family time in the parks. Spring break times will vary from state to state. Not crazy but dont expect the parks to be empty. Go with the expectations that there will be waits and lines still. F&G is a beautiful event to experience and youll be going when they will be in colorful bloom.

Just one person's experience, but we were in Disney the exact same time this year (7th through the 13th) crowds were not bad at all. Certainly not anything spring-break related. In 2023 we were down the week prior (so the very beginning of April). Both times I was concerned about spring break as well due to warnings from others, but it was never a problem for us and like you my (albeit brief) research both years turned up that most college breaks are March, not April.
