I have wondered why there hasn't been a follow up to the Incredible's movie..

anyone know the reasons why Disney hasn't jumped on this?

Probably because they don't believe it to be a "franchise", or in other words, they don't believe they can make a killing off another.

Toy Story and Toy Story II were released 1995 and 1999 respectively, Incredibles was 2004, they still could.

Pixar doesn't do sequels just to do sequels (That's Disney's thing). Their unwritten rule is that they only do a sequel when they have a story that's worth doing. They are too busy focusing on new ideas (with the notable exception of the 'Cars' sequel in 3 years) rather than coming up with a new 'Incredibles' story.

Another reason may be that Brad Bird is working on a live action film called 1906. He had to stop work on it when he was asked to take over Ratatouille. Its currently slated as a co-production between Warner Bros. and Disney/Pixar. The story centers on a college student who begins to investigate the murder of his father, uncovering a web of deceit that has left the city vulnerable to the sort of fire that breaks out when the Great Earthquake of 1906 hits San Francisco.(Comingsoon.net)
