You have to make reservations, and that there is only 2 seatings per day, 4:45PM and 7:30PM.
From what I have read the buffet will feature beef, chicken, pasta, seafood, salads, a children's buffet, and desserts.
The grill that's going in at Terrors of the Deep is scheduled to open sometime in fall of this year.
Glad you posted this, everyone was talking like it was something that may happen, I was going to chime in and say I'll be eating there in November, but you are going before me. I think the Terrors of the Deep will be a sit down restaurant and will open this fall. Thee is info on both of these if you look at the SeaWorld page:

Dine With Shamu offers park guests an awe-inspiring VIP experience and an opportunity to eat alongside killer whales, mingle with Shamu trainers, and observe training sessions in an exclusive backstage area. This buffet-style meal is located poolside and is sure to "wet" the appetite. A variety of food will be available, including: salads, pasta, seafood, beef and chicken entrees, in addition to a separate children's buffet, and a delectable dessert menu.
Dine With Shamu takes place at Shamu Stadium and accommodates about 200 guests per seating. Cost for adults is $28 and $16 for children ages 3-9. Gold, Silver and Platinum Passport members will receive a $5.00 discount.
