Animal Kingdom and Epcot same day with park hopper?

I'm kicking around ideas for our next trip. It will be myself, my wife and two boys (ages 4 and 7). With two young kids, we aren't thrill seeking people, but they love Disney entertainment and smaller rides/attractions. ADR's will not be needed at either park. I'd also like to give the boys some rest around lunch time so they don't get Disney burnout.

Is it feasible to do Animal Kingdom in the morning and Epcot in the afternoon/evening?

It really all depend on what you want to do. You really shouldn't think about it as parks but what attractions you want to do for the day. For example for me for those two parks I would want to do the Safari, Exp Everest, maybe Primeval Whirl, possibly Spaceship Earth, Soarin and The American Adventure. So for me personally those are both easily half day parks. Now put me in a time machine to 1990 and EPCOT becomes a 2 day park. It's different for everyone, just depends on what you want to do.
