Advice on adding an Extra Magical Experience

My family and I will be making our triumphant return to WDW in November 2019 (sadly our 18 trip had to be pushed due to new job and not wanting to take a full week off less than a year in.)

Having to miss this year, I wanted to do something a little extra special when we make it back in 2019, so I was wondering on possible advice/suggestions on adding on a "extra" to the normal park experience. Any thoughts are welcome, from safari tour at AK, to a boat rental at contemporary, just looking for some ideas on what people think are some of the unique opportunities of extra exploration of Disney.

My 'Extra Special Magical Addition' for my nieces first visit will be a fireworks cruise for either Magic Kingdom or Epcot. Figure that will guarantee they get to see the fireworks without having to deal with the end of night crowds.

A relatively cheap option is the touring with the Giants tour in AK - you get to see the elephants closer and my kids had a really great time. Behind the Seeds is another great tour, it makes EPCOT feel like it's supposed to. I'd recommend against renting a boat unless you have a lot of days - it's a big chunk of time, worth it if you have a 'rest' day built in but otherwise you may feel like you're missing out on other experiences.
