If i add a second separate room to an existing reservation, is the charge essentially just double the first room? Or is there an upgrade package at a lesser rate?

There are no discounts when booking a second room vs only one. Also it's quite likely that it'll be a separate reservation, though they can link the two together.

Once my husband and I brought grandma and wanted a second room. Since we had booked a room only reservation with a discount offer, we were able to book a second room on a discount by putting an adult on each reservation. The only problem with this, is that can't guarantee the rooms will be together, but we lucked out.
I believe if you add another room to a package (whether or not its discounted) of course, it will be at full price.

Ok, so no discounts, I did add the additional night over the phone, same resort, minus the dinning plan.

Did this so we could relax another night before driving home.

Do you think when we check in at the desk upon arrival, they can link the final day so we don't have to change rooms?

You can but ask.
It may be that your first room is booked after your initial use of it. These next guests who are staying in your room would get it for their full stay, therefore you'd move for your one extra night. However, if your room is only booked for one night by the next guests it would be easier for you to keep it and put the other guests elsewhere.
