Adding one more day to trip advice

We have reserved a week at the Beach Club Resort in April. I am thinking of adding one more day to the trip. I have questions about the last day's itinerary. This is what I'm thinking of doing, since there are no more rooms left at Beach Club to add:

Saturday: Arrive at resort in the evening. We will rent a car for the week.
Sunday: Hollywood Studios
Monday: Magic Kingdom (Be Our Guest Breakfast)
Tuesday: Animal Kingdom (Tusker House Lunch)
Wednesday: POOL it at the RESORT
Thursday: Epcot
Friday: RESORT pool again, golf maybe, Disney Springs, whatever
Saturday: check out is 11am, but we would go back to Magic Kingdom for the 5th day ticket pass, and then at the end of the day, drive to airport hotel we have reserved for the night.
Sunday: leave VERY early flight.

My questions are about Saturday. We have 5 day ticket passes. So one park per day for 5 days.
1. Does that include the last day (checkout day)?
2. If we go to MK on Saturday and have checked out of our resort, can we hang out there at all during the day, i.e. return to rest at pool, for instance, even though we have checked out at 11am?
3. Does this seem doable? 2 kids are 11 and 12. Easy.

In answer to your questions:
1 - You can use your 5 day passes any 5 days during your trip, including your check-in and check-out days. They do not have to be consecutive. Should you choose to tack on additional days (which is cheap, as the price-per-day goes down the longer your ticket length is), you can do it at Guest Services at any time, so long as you still have at least one valid admission remaining.
2 - You can continue to use the resort amenities even after checking out (up until midnight on your checkout day, per WDW's official website)! There are showers and changing rooms you can use near the pool area. If you'd prefer not to leave your bags in your rental car, Bell Services will hold on to them for you after you check out.
3 - Yes, this seems very doable. You may even find that two "pool days" is a little too much, so I'd have some other ideas for those days as well. (e.g., extend your tickets and spend another partial day at MK or AK, go off-site to an Escape Room, visit a water park, or play mini-golf at Fantasia Gardens, which is over at Swan & Dolphin, an easy walk from your hotel). If you're able to arrive at rope drop, you should be able to do everything you want in HS, AK and Epcot. MK has many more attractions: with just one day at MK, you won't be able to do everything there, so I highly recommend returning there on your last day as you suggest. You can check out as early as you like, to be there in time for rope drop.

Thanks so much for your reply on this! I am only considering adding the day because last time we went, we did not stay on site. We stayed at a Disney Hotel (Bonnet Creek) and used their transportation system, which I did not enjoy waiting for after the world's longest days at the park. We did not go back and forth. We went to one park a day for 4 days, had a day of rest , repeated MK for a fifth day and then went to Universal for a day and I thought I would drop dead. So I thought adding one more day of "whatever" would be a good idea. I am so on the fence about this. We should book air today, so I am trying to decide if Sat to Sat with one day off, no Universal, repeat MK would be just fine!
